Mom's Jackfruit Seed Recipe


If you've never tried Jackfruit before, I'd highly recommend you trying it.  It is a delightful fruit found in areas having a tropical climate such as Southern Asia, India, the Caribbean.  In Jamaica where I grew up I have fond memories of the strong fruity aroma when it was ripening, eating the soft yellow flesh, and afterwards roasting and eating the seeds which to me smelled like chocolate and tasted like tapioca.  

The edible portion (pictured above) of the Jackfruit are on the inside as clusters of yellowish pockets with seeds enclosed.  It takes some work getting to, and maybe requires some oil on your hands before to get the stains off, but it is worth it.  If you want to avoid all of that work, you can find canned jackfruit in many local farmers market or specialty gourmet store.

Jackfruit is very nutritious and there are numerous health related benefits that can be derived from its consumption.  But as my dad always says, "your food should be taken as medicine, too much will make you sick" so don't over do it.


Mom's Jackfruit Seed Recipe

A quick search on the web and you will find numerous recipes for cooking Jackfruit and the seeds, but I wanted to share a few ways that my mom prepares "Chakka" (as she calls it in Malayalam).


Recipe - Stir Fried Jackfruit Seeds


  • Jackfruit seeds (chopped into small pieces)
  • Onions (chopped)
  • Curry leaves (substitute Bay leaves)
  • Turmeric (pinch)
  • Chilli powder (to taste)
  • Salt (to taste)
  • Coconut oil (preferred)

Directions:  Fry onions with curry leaves (bay leaves is a good substitute) until onions are glazed.  Add chilli powder, turmeric.  Add jackfruit seeds and cook on low until done (soft).


Recipe - Jackfruit Seed Cutlets


  • Jackfruit seeds
  • Water (enough to cover for boiling)
  • Seasonings (your choice)
  • Egg (beaten)
  • Bread crumbs
  • Oil (coconut preferred)

Directions:  Boil jackfruit seeds for 10 - 15 minutes as you would potatoes.  Remove and cool under running water.  Remove protective (plastic like layer from seeds).  Mash (like potatoes).  Season.  Form into small flat doughs.  Dip in egg then bread crumbs.  Shallow fry.


As I mentioned before you can roast the seeds or bake in an oven at about 400° for 20 minutes or so.
